Gluten Free In the KBS Bread Maker

Possibly the 2nd most asked question in any bread making group is for a Gluten Free recipe. Not my issue, so have not tried… yet … never say never.

A member of the KBS group I had been helping build, reported (after trying several recipes) that this one worked for her. Using a KBS dual heater model (I think it was the MBF-011 but will check and edit if needed.

As the owner (as in bought it myself) and having had the opportunity to test a number of brands and models; It may need some tweaking for your machine, but seems like a good place to start:

The Bread Lover’s Bread Machine Cookbook – By Beth Hensperger is useful for ALL who enjoy bread baking – not just machine users. It answers about 90 percent of all questions ever asked – even some that are more or less machine specific

If you are new to Bread Machines (even those otherwise experienced in bread baking) you will benefit through taking the time at least read the Orientation section.

I have used this book with 1/2 doz different machines since it publication and never had a recipe fail IF I FOLLOWED THE DIRECTIONS of both the Machine Order of adding Ingredients and the recipe.

KBS MBF-### Models: “Most if NOT All Recipes:
Use the KBS recommended Order of Ingredients.
When Ms Anderson says to use the Menu “Dough” – USE KBS “Leaven Dough”
Includes measurements for 1 pound, 1.5 pound and 2 pound loaves

Tiplet: With any bread machine recipe, I usually hold back an ounce/tablespoon or two of the primary liquid. Adding it back if needed beginning about ten (10) minutes after first starting the machine is much easier (for me) than trying to get it right by adding flour.







Tiplet: Bread Machine Pan Warming

It never made sense to me to go to the trouble of getting liquid to a suitable temp to dump it into a cold bread pan, so my first step is to remove pan from machine, put in some HOT tap water and let it warm the pan while I gather ingredients. Maybe just my imagination, but it seems to help with better first rise.

I recently noticed newer machines seem to have a “pre-heat” function, so maybe I was not all that far off before. (edited to add Dec 2023 – My KBS Model MBF-041 does have preheat)
